Grilled Chicken with Melon in Pasta Shells
A nice chicken grill recipe to try...great one !
INGREDIENTS
* 1 medium ripe mango, peeled seeded, chopped
* 2 cleaned deboned chicken breasts
* 6 jumbo pasta Shells
* 1/2 cantaloupe seeded diced
* 1/4 cup of sour cream
* 1 tablespoon fresh chives, minced
* 2 tablespoon lime juice
* 1 tsp Dijon Mustard
INSTRUCTIONS
First of all season chicken breasts with salt pepper and seasonings which you like. And then grill chicken. Next is to cool cut in to small pieces. Set aside. Cook pasta according to directions on package. Rinse with cold water and set aside.
Combine diced mango and melon, chicken and rest of ingredients...and the chicken grill recipe is ready to serve...a unique taste ! Great one !

HERB-GRILLED CHICKEN RECIPE
These chicken grill recipe of split broilers have a herb butter spread under the skin. Walnuts, basil and garlic baste into the meat while cooking over coals. Grill the entire meal if you wish: potato wedges, tomato halves and corn on the cob.
CHICKEN GRILL INGREDIENTS
Preparation: First of all Split chickens in half. Cut off excess fat in tail area. Loosen the skin away from the meat and remove any fat underneath. You can also cut away backbone, if desired.
And then Mix together basil, garlic, walnuts, butter, oil, hot pepper sauce and black pepper. Press all but 1 to 2 tablespoons of herb mixture under the skin, reaching as many areas as possible.
When charcoal is ready , place chicken bone side down. Grill 12-15 minutes.
Meanwhile, to remaining herb butter add the oil, lemon juice and white wine. Brush some of this on the underside once. Turn chicken. Grill 12-15 minutes longer. Brush underside a few times
during cooking. Do not allow meat to char. Season with salt and black pepper if desired.

- 1/2 c. minced walnuts
- 2 tbsp. soft butter
- 2 tbsp. olive oil
- Dash hot pepper sauce Fresh cracked black pepper
- 2 tbsp. olive oil
- 1 tbsp. each lemon juice and white wine

First of all in a blender blend together the garlic paste, the vinegar, 2 tablespoons of the oil, the water, the cumin, the Tabasco, the bread, half the tomatoes and salt and pepper to taste until the mixture is smooth, transfer the mixture to a bowl, and stir in the remaining tomatoes, the cucumber, the bell pepper, the onion, and the coriander or parsley.
And then brush the chicken with the additional oil, season it with salt and pepper, and grill it on a rack set 5 to 6 inches over glowing coals, or in a hot well-seasoned ridged grill pan, covered, over

* 1/2 teaspoon garlic herb seasoning, optional

Put each chicken breast half between two sheets of plastic wrap; pound lightly to flatten evenly. Salt and pepper both sides of the chicken pieces.Lightly oil the grill or grill pan. Grill over medium coals or medium-high heat for about 3 to 4 minutes on each side, or until cooked through. If desired, place a few spoonfuls of Roasted Red Pepper Puree on the plate, place the chicken breast on top of the sauce, and spoon the herbed goat cheese sauce (below) over the chicken.

* 1 cup sweet orange marmalade
* 2 tablespoons balsamic vinaigrette
* 1 to 1 1/2 tablespoons green jalapeno salsa, or to taste
* 1/4 teaspoon salt
* Dash black pepper
* 1/4 teaspoon garlic powder
* 4 boneless chicken breast halves
Chicken Grill Recipes Instructions:
In a small saucepan, combine the marmalade, vinaigrette, salsa, salt, pepper, and garlic powder. Heat the mixture, simmering, until the marmalade has melted. Set aside to cool completely.
Wash chicken and pat dry; place in a food storage bag. If desired, pound gently with a mallet or heel of hand to even thickness. Add cooled marinade mixture, seal the bag, and refrigerate for at least 2 hours.Take chicken from the marinade and pour marinade into a saucepan. Bring marinade to a boil; reduce heat to low and simmer for 5 minutes.Grill chicken for about 5 to 6 minutes on each side, or until chicken is cooked through. * 2 tablespoons olive oil
* 1 tablespoon butter
* 1 cup diced onion
* 1 cup diced bell peppers, red, yellow, and green
* 3 medium cloves garlic, finely minced
* 1 cup brown rice
* 1 teaspoon Cajun seasoning
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 2 cups chicken broth
* 1 can (15 ounces) petite diced tomatoes, drained
* 1 can (15 ounces) black beans, drained
* 1 cup fresh or frozen corn kernels
* 1 tablespoon fresh chopped parsley
* 4 to 6 boneless chicken breast halves
* Light balsamic vinaigrette
* 1 tablespoon honey
* Dash cayenne pepper
* Juice of 1 lime
Chicken Grill Recipe Instructions:
Wash chicken and pat dry.In a food storage bag, combine the chicken, vinaigrette, honey, cayenne, and lime juice. Marinate for 2 to 4 hours.Heat olive oil and butter over medium heat; add onion and sauté until tender. Add diced peppers and garlic. Continue simmering until tender. Add the rice, Cajun seasoning, pepper, salt, and chicken broth. Bring to a simmer; cover and simmer over low heat for about 12 minutes, until most of the liquid is absorbed. Add a little more chicken broth or water if needed. Add the black beans, tomatoes, corn, and parsley. Continue cooking until rice is tender, about 10 minutes longer.
Grill the marinated chicken over hot coals for about 10 to 12 minutes on each side, or until cooked through. The time will depend on thickness. Juices will run clear when pierced with a

Heat 1 tablespoon low fat butter in Teflon skillet. Prepare chicken with salt, pepper and garlic powder. Grill on both sides until well browned. Sprinkle with parsley flakes and powdered
chicken soup-gravy mix. Remove chicken - add 1 box frozen peas pods and 1 can mushroom stems and pieces with some of the liquid.
Add chicken and steam for about 7 minutes with lid on skillet.
Chicken is also good without pea pods and mushrooms - just add 2 tablespoons water to drippings and steam. This great chicken grill recipe is ready to serve....hmmm...amazing ! Enjoy the feasts !
