PAN GRILLED CHICKEN BREASTS

INGREDIENTS
  • chicken
  • 1 tablespoon low fat butter
  • salt,
  • pepper and
  • garlic powder
  • parsley flakes
  • powdered chicken soup-gravy mix
  • 1 box frozen peas pods
  • 1 can mushroom stems

INSTRUCTIONS

Heat 1 tablespoon low fat butter in Teflon skillet. Prepare chicken with salt, pepper and garlic powder. Grill on both sides until well browned. Sprinkle with parsley flakes and powdered
chicken soup-gravy mix. Remove chicken - add 1 box frozen peas pods and 1 can mushroom stems and pieces with some of the liquid.
Add chicken and steam for about 7 minutes with lid on skillet.
Chicken is also good without pea pods and mushrooms - just add 2 tablespoons water to drippings and steam. This great chicken grill recipe is ready to serve....hmmm...amazing ! Enjoy the feasts !

GRILLED GINGER-SESAME CHICKEN WINGS

INGREDIENTS
  • 4 lb. chicken wings
  • 1 1/2 tbsp. ginger
  • 1 jalapeno pepper, steamed, seeded and chopped
  • 2 med. size cloves garlic, chopped
  • 2 tbsp. brown sugar
  • 6 tbsp. soy sauce
  • 2 tbsp. sesame or vegetable oil
  • 2 tsp. Oriental sesame oil
INSTRUCTIONS
Light charcoal grill. Remove smallest section of each wing and discard. In a large bowl, combine remaining ingredients and stir to blend. Add wings and turn into marinade. Let wings marinate,
turning several times. Remove and grill wings brushing often with marinade for about 20 minutes until skin is crisp and meat is tender. The chicken grill recipes is ready to serve...nice and tasty ! Enjoy it !

HERB-GRILLED CHICKEN

HERB-GRILLED CHICKEN RECIPE

These chicken grill recipe of split broilers have a herb butter spread under the skin. Walnuts, basil and garlic baste into the meat while cooking over coals. Grill the entire meal if you wish: potato wedges, tomato halves and corn on the cob.

INGREDIENTS
  • 1/2 c. fresh basil leaves
  • 2 cloves garlic, minced or pressed
  • 1/2 c. minced walnuts
  • 2 tbsp. soft butter
  • 2 tbsp. olive oil
  • Dash hot pepper sauce Fresh cracked black pepper
  • 2 tbsp. olive oil
  • 1 tbsp. each lemon juice and white wine
INSTRUCTIONS
Tips: If diners are not big eaters, 1 chicken would be enough for 4 people. If fresh basil is not available, use 2 teaspoons dried basil leaves or 1/2 cup chopped fresh parsley. Grill potato wedges (brushed with a little herb butter), tomato halves with onion slices and corn (silk removed, soaked in husks in water for 30 minutes). Vegetables will take from 20-30 minutes to grill.
Preparation: Split chickens in half. Cut off excess fat in tail area. Loosen the skin away from the meat and remove any fat underneath. You can also cut away backbone, if desired.
Mix together basil, garlic, walnuts, butter, oil, hot pepper sauce and black pepper. Press all but 1 to 2 tablespoons of herb mixture under the skin, reaching as many areas as possible.

When charcoal is ready , place chicken bone side down. Grill 12-15 minutes.
Meanwhile, to remaining herb butter add the oil, lemon juice and white wine. Brush some of this on the underside once. Turn chicken. Grill 12-15 minutes longer. Brush underside a few times
during cooking. Do not allow meat to char. Season with salt and black pepper if desired.

INGREDIENTS
  • 1 bottle Caesar salad dressing
  • 1 bottle Italian salad dressing
  • 1/4 c. butter, melted

INSTRUCTIONS
Cut boneless chicken breasts into strips and put into bowl. Pour equal amounts of salad dressings over chicken to cover. Marinate in refrigerate 3-5 hours. Remove chicken strips from marinade and cook on barbecue grill. Add melted butter to marinade and brush chicken with marinade as it cooks. Grill for approximately 20-30 minutes until done. The chicken grill recipe marinated is ready...great for feast ! Enjoy the party !

INGREDIENTS
  • 8 lg. chicken breast halves, skinned, boned & pounded lightly to even thickness
  • 2 tbsp. lime zest (finely grated peel)
  • 1/3 c. lime juice
  • 1 tbsp. garlic, minced
  • 1/4 c. tequila
  • 1/4 c. triple sec
  • 2 serrano or jalapeno peppers, chopped finely
  • Salt & pepper to taste

INSTRUCTIONS
1. Flatten chicken breasts and set aside. Combine ingredients in bowl or dish large enough to hold chicken.
2. Add chicken to marinade, turning to coat each piece completely. Marinate 30 minutes.
3. Meanwhile, preheat grill. Remove chicken from marinade. Salt
and pepper both sides of chicken.
4. Grill chicken until no pinkness remains. Serve with salsa.
Serves 8.

TOMATO LIME SALSA WITH GRILLED CHICKEN:

INGREDIENTS
  • 6-8 plum tomatoes, seeded & chopped
  • 1/2 seedless (English) cucumber, chopped fine
  • 1 tbsp. lime zest (finely grated peel)
  • 3 tbsp. lime juice
  • 3 tbsp. olive oil
  • 1 tbsp. garlic, minced
  • 2 serrano chilies, chopped fine
  • 3 tbsp. mint, chopped
  • 3 tbsp. cilantro, chopped
  • 1 tsp. salt
Combine all ingredients. Taste and adjust seasonings. Cover and refrigerate. The chicken grill recipe with tomato lima salsa is ready...enjoy the feasts ! Great !

GRILLED CHICKEN RECIPE of CAESAR SALAD

INGREDIENTS
  • 2 eggs
  • 1 can anchovies with oil
  • 2 lg. pods garlic, mashed
  • 1 1/2 c. olive oil
  • 1/2 c. canola oil
  • Juice of 2 lemons
  • 1/2 c. freshly grated Parmesan cheese
  • Freshly ground black pepper
  • 4 boneless, skinless chicken breasts that have been marinated in Italian dressing, grilled or sauteed, cut into strips
  • Romaine lettuce

INSTRUCTIONS
Place eggs in food processor. Add garlic and lemon juice. Process with anchovies and anchovy oil. Slowly add olive oil and canola oil until well mixed. Add freshly ground pepper.
Break washed crisp Romaine lettuce in small pieces. Toss with grilled or sauteed chicken and Parmesan cheese. Variation: Use grilled or boiled shrimp. The chicken grill recipe is ready to serve...enjoy it !

INGREDIENTS
Double or triple ingredients as needed.
  • 1 c. (4 oz.) button mushrooms, drained (or use fresh and pre-boil 1 to 2 minutes)
  • 1 can pineapple chunks, drained
  • Red and green pepper chunks
MARINADE:
  • 2 tbsp. oil
  • 2 tbsp. soy sauce
  • 2 tbsp. lemon juice
  • 2 tbsp. fresh parsley, snipped
  • 1/2 tsp. salt
  • Pepper to taste

INSTRUCTIONS
Place chicken and mushrooms in marinade overnight (6 to 12 hours).
Turn often, if possible. Alternate on skewers with remaining items. Grill 3 inches from heat 5 to 8 minutes, turning and basting with butter. The chicken grill recipe is ready to serve...nice !
