Sweet and Sour Grilled Chicken

Sweet and Sour Grilled Chicken
Try this chicken grill recipe...with sweet and sour taste !
Chicken Grill Ingredients:

* 1 can (20 ounces) crushed pineapple
* 1 cup ketchup
* 1/3 cup light brown sugar, packed
* 2 tablespoons lemon juice
* 1 tablespoon grated lemon peel
* 3 to 3 1/2 pounds chicken pieces
* 1 tablespoon cornstarch

Chicken Grill Instruction:
First of all drain the pineapple well, reserving the juice. In a resealable food storage bag, combine juice with ketchup, brown sugar, lemon juice, and lemon peel. And then add chicken to the bag, seal, and refrigerate for at least 3 hours or overnight. Arrange chicken on hot grill over medium coals about 4 inches from coals.
Grill 20 minutes on each side, or until done. Combine marinade with pineapple and cornstarch in a saucepan. Cook, stirring, until mixture boils and thickens. Baste chicken sauce about 5 minutes before done. The Sweet and sour grilled chicken is ready to serve 4 great persons.... nice one ! Enjoy it !


HERB-GRILLED CHICKEN

HERB-GRILLED CHICKEN RECIPE

These chicken grill recipe of split broilers have a herb butter spread under the skin. Walnuts, basil and garlic baste into the meat while cooking over coals. Grill the entire meal if you wish: potato wedges, tomato halves and corn on the cob.

CHICKEN GRILL INGREDIENTS
  • 1/2 c. fresh basil leaves
  • 2 cloves garlic, minced or pressed
  • 1/2 c. minced walnuts
  • 2 tbsp. soft butter
  • 2 tbsp. olive oil
  • Dash hot pepper sauce Fresh cracked black pepper
  • 2 tbsp. olive oil
  • 1 tbsp. each lemon juice and white wine
CHICKEN GRILL INSTRUCTIONS
Preparation: First of all Split chickens in half. Cut off excess fat in tail area. Loosen the skin away from the meat and remove any fat underneath. You can also cut away backbone, if desired.
And then Mix together basil, garlic, walnuts, butter, oil, hot pepper sauce and black pepper. Press all but 1 to 2 tablespoons of herb mixture under the skin, reaching as many areas as possible.

When charcoal is ready , place chicken bone side down. Grill 12-15 minutes.
Meanwhile, to remaining herb butter add the oil, lemon juice and white wine. Brush some of this on the underside once. Turn chicken. Grill 12-15 minutes longer. Brush underside a few times
during cooking. Do not allow meat to char. Season with salt and black pepper if desired.

  • 1 garlic clove, minced and mashed to a paste with
  • 1/4 teaspoon salt
  • 1 tablespoon red-wine vinegar
  • 2 tablespoons olive oil plus additional for brushing the chicken
  • 2 tablespoons water
  • 1/4 teaspoon ground cumin,, or to taste
  • Tabasco to taste
  • 1 slice type white bread,, torn into pieces
  • 2 plum tomatoes,, seeded and chopped fine
  • 1/2 cup finely chopped, seeded and peeled cucumber
  • 1/3 cup finely chopped green bell pepper
  • 1/4 cup finely chopped red onion
  • 2 tablespoons finely chopped fresh coriander or parsley
  • 1 whole boneless chicken breast with skin (about 1 pound),, halved

First of all in a blender blend together the garlic paste, the vinegar, 2 tablespoons of the oil, the water, the cumin, the Tabasco, the bread, half the tomatoes and salt and pepper to taste until the mixture is smooth, transfer the mixture to a bowl, and stir in the remaining tomatoes, the cucumber, the bell pepper, the onion, and the coriander or parsley.

And then brush the chicken with the additional oil, season it with salt and pepper, and grill it on a rack set 5 to 6 inches over glowing coals, or in a hot well-seasoned ridged grill pan, covered, over

* 1 tablespoon extra-virgin olive oil
* 3 tablespoons dry white wine
* 1 cup chicken broth
* 1 teaspoon fresh parsley
* 4 ounces herbed goat cheese
* salt and pepper, to taste
* 1/2 teaspoon garlic herb seasoning, optional

Chicken Grill Recipes Instructions:
Put each chicken breast half between two sheets of plastic wrap; pound lightly to flatten evenly. Salt and pepper both sides of the chicken pieces.Lightly oil the grill or grill pan. Grill over medium coals or medium-high heat for about 3 to 4 minutes on each side, or until cooked through. If desired, place a few spoonfuls of Roasted Red Pepper Puree on the plate, place the chicken breast on top of the sauce, and spoon the herbed goat cheese sauce (below) over the chicken.

Goat Cheese Sauce:
Combine olive oil, wine, and chicken broth in a saucepan; simmer over medium heat until reduced by about 1/2. Add the parsley, goat cheese, salt and pepper, and garlic herb seasoning, if using. * 1 cup sweet orange marmalade
* 2 tablespoons balsamic vinaigrette
* 1 to 1 1/2 tablespoons green jalapeno salsa, or to taste
* 1/4 teaspoon salt
* Dash black pepper
* 1/4 teaspoon garlic powder
* 4 boneless chicken breast halves

Chicken Grill Recipes Instructions:
In a small saucepan, combine the marmalade, vinaigrette, salsa, salt, pepper, and garlic powder. Heat the mixture, simmering, until the marmalade has melted. Set aside to cool completely.
Wash chicken and pat dry; place in a food storage bag. If desired, pound gently with a mallet or heel of hand to even thickness. Add cooled marinade mixture, seal the bag, and refrigerate for at least 2 hours.Take chicken from the marinade and pour marinade into a saucepan. Bring marinade to a boil; reduce heat to low and simmer for 5 minutes.Grill chicken for about 5 to 6 minutes on each side, or until chicken is cooked through. * 2 tablespoons olive oil
* 1 tablespoon butter
* 1 cup diced onion
* 1 cup diced bell peppers, red, yellow, and green
* 3 medium cloves garlic, finely minced
* 1 cup brown rice
* 1 teaspoon Cajun seasoning
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 2 cups chicken broth
* 1 can (15 ounces) petite diced tomatoes, drained
* 1 can (15 ounces) black beans, drained
* 1 cup fresh or frozen corn kernels
* 1 tablespoon fresh chopped parsley
* 4 to 6 boneless chicken breast halves
* Light balsamic vinaigrette
* 1 tablespoon honey
* Dash cayenne pepper
* Juice of 1 lime

Chicken Grill Recipe Instructions:
Wash chicken and pat dry.In a food storage bag, combine the chicken, vinaigrette, honey, cayenne, and lime juice. Marinate for 2 to 4 hours.Heat olive oil and butter over medium heat; add onion and sauté until tender. Add diced peppers and garlic. Continue simmering until tender. Add the rice, Cajun seasoning, pepper, salt, and chicken broth. Bring to a simmer; cover and simmer over low heat for about 12 minutes, until most of the liquid is absorbed. Add a little more chicken broth or water if needed. Add the black beans, tomatoes, corn, and parsley. Continue cooking until rice is tender, about 10 minutes longer.
Grill the marinated chicken over hot coals for about 10 to 12 minutes on each side, or until cooked through. The time will depend on thickness. Juices will run clear when pierced with a

Place eggs in food processor. Add garlic and lemon juice. Process with anchovies and anchovy oil. Slowly add olive oil and canola oil until well mixed. Add freshly ground pepper.

Add chicken, beef or pork to this marinade. Let sit in refrigerator for two days.

  • 4 boneless, skinless chicken breast halves (1 lb.)
  • 1/3 cup Kraft classic Caesar dressing
  • 1/4 cup Kraft barbecue sauce, any flavor,

INSTRUCTIONS
Place chicken on cutting board and use a kitchen mallet, rolling pin or small sauce pot to flatten any thick ends. This step ensures even width and even cooking.
Pour dressing into a large resealable plastic bag.
Place chicken in bag with dressing. Seal bag and refrigrate 30 min. to 1 hour to marinate.
Preheat barbecue to medium heat. Remove chicken from plastic bag and discard marinade. Place chicken on barbecue; cover with lid.
Grill 6 to 8 minutes on each side or until cooked through.
Brush with barbecue sauce during last few minutes of grilling time.

INGREDIENTS
  • 1 1/2 lb chicken breast, boned and skinned
  • 2/3 cup plain yogurt
  • 1 tablespoon peeled, chopped fresh ginger
  • 2 garlic cloves, crushed
  • 2 tablespoons lemon juice
  • 1 tablespoon coriander seeds, ground
  • 1 teaspoon chile powder
  • 2 tablespoons vegetable oil
  • salt and freshly ground pepper
  • lemon wedges for garnish

INSTRUCTIONS
Rinse chicken, pat dry with paper towels and cut into 3/4 inch cubes. Thread onto short skewers. Put skewered chicken into a shallow dish.
Mix together all the ingredients in a large bowl and make a paste.
Pour over skewered chicken and turn to coat completely in marinate. Cover and refrigerate for at least 5 hours.
Heat grill. Place skewered chicken on grill rack and cook 5 to 7 minutes, turning skewer.

HAWAIIAN GRILLED CHICKEN RECIPE

INGREDIENTS
  • 1/2 cup olive oil
  • 1/3 cup freshly squeezed lemon juice
  • 1/2 cup soy sauce
  • 3-4 cloves garlic, peeled and minced
  • 1-2 teaspoons fresh oregano
  • 1-2 teaspoons fresh Rosemary
  • 1-2 teaspoon fresh basil (optional)
  • 1 teaspoon salt
  • 1/4 teaspoon black or lemon pepper
  • 1 4 lb. chicken broiler chicken, halved
  • olive oil spray (for use during cooking)

INSTRUCTIONS
Wash chicken and place both halves in a large Ziploc bag.
Squeeze lemon juice; add zest (the yellow portion of the peel) for extra flavor.
Combine remaining ingredients with the lemon juice and place in bag. Refrigerate for several hours (up to 6 hours), turning occasionally.

Place chicken on broiler rack, skin side down or on grill; keep chicken about 7 inches away from heat. If grilling, set chicken on opposite side of the coals to avoid flare-ups. At start of
cooking, brush chicken with marinade - then discard marinade so that you're not tempted to use it during the cooking (for safety's sake).

Note: For extra flavor, sprinkle chicken liberally with salt, pepper, garlic and onion powder just before cooking. Substitute lemon pepper for the black pepper, if available, for an extra zesty kick.

Broil or grill chicken for 20 minutes or until browned on one side, avoiding flare ups. At this point, spray the chicken lightly with olive oil spray; then turn it to the other side and spray
again. Cook for another 10 minutes or so until chicken is done (juice no longer runs pink).

Variation: Wine vinegar may be substituted for the lemon juice. If fresh herbs are not available, substitute 1/2-3/4 teaspoon dried.

INGREDIENTS
  • 6 whole boned, chicken breasts (skin on)
  • 2 tablespoons green or yellow onion, finely chopped
  • 3 cloves garlic, minced
  • garlic powder, salt and pepper (for sprinkling)
  • 1/2 teaspoon paprika
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon fresh Rosemary, minced
  • 2 tablespoons fresh Parsley, minced
  • 1/4 cup each of butter and olive oil
  • 1 1/2 cups bread crumbs
  • 1/2 lb thinly sliced ham or prosciutto, finely chopped
  • 12 wooden toothpicks (soaked in water for 5 minutes)

INSTRUCTIONS
Preheat grill so that coals are white hot in time for grilling.
Melt butter in microwave, stir in oil. To this warm mixture, add Parsley, Rosemary, minced garlic, chopped onion and paprika (a pinch of rubbed sage may optionally be added if you have it on hand, but be careful not to overdo). Allow the herbs to infuse for 10 minutes. Remove 3-4 tablespoons to a separate small bowl and use this to brush both sides of the chicken.

Place chicken breasts, skin side down, on a layer of wax paper or plastic wrap. Pound lightly with the back of a heavy frying pan or meat mallet until slightly flattened out. Sprinkle chicken with salt, pepper, and garlic powder.

In a small bowl, mix together bread crumbs with Parmesan cheese and chopped ham. Add remaining butter, oil and herb mixture to bread crumbs and stir until well combined (if mixture seems too thick, add a tablespoon or so of warm water or more olive oil).
Spoon stuffing mixture into the hollow part inside the chicken breasts. Fold edges of chicken over stuffing to cover and fasten together securely with wooden toothpicks.

Place chicken (about 6 inches away) over white hot coals on grill, skin side down. Grill on one side for about 20 minutes; brush again with more butter/oil mixture (if you run out, just use olive
oil spray). Turn chicken over and grill for another 20 minutes or until chicken is tender and golden. Remove toothpicks and serve.

Variation: Place a slice of provolone cheese over each breast before stuffing and rolling up.
To make a great take-along lunch, this may also be prepared in aluminum foil pouches (one for each breast). Spray the inner side of the foil with olive oil and add a slice of or two of onion to

INGREDIENTS
  • 6 split chicken breasts
  • 1/2 lb Italian sausage meat
  • 3 cloves fresh garlic, minced
  • 4 strips hickory or maple flavored bacon, chopped
  • 1/4 lb fresh mushrooms, finely chopped
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, minced
  • 1/4 teaspoon paprika
  • 1/2 cup bread crumbs
  • 1/8 teaspoon each onion and garlic powder
  • 1 cup sherry
  • 6 bacon strips
  • salt and pepper, to taste
  • wooden toothpicks or butcher's string

INSTRUCTIONS
Sauté the sausage meat with fresh, minced garlic in 1/2 tablespoon olive oil; as the sausage begins to take on color, add the 4 bacon strips and fry til bacon is crisp and sausage is slightly browned, removing meat as it cooks. Add butter to pan and sauté the mushrooms over medium heat. Stir in bread crumbs and parsley.
Season with salt, pepper, onion powder, garlic powder and paprika.
Stir together well and pour in sherry to moisten. Remove from heat and stir in the sausage mixture.
Preheat grill until it reaches 350°F.

Split chicken breasts and pound with a meat mallet between sheets of plastic wrap. Do not make too thin. Spread sausage and bread crumbs mixture on eachchicken breast, and roll up so that chicken is stuffed on the inside. Wrap each piece with a strip of bacon and fasten with a wooden toothpick or tie into little bundles with cotton string that has been pre-soaked in water.

Spray chicken with olive oil spray and sprinkle lightly with garlic powder, paprika and black pepper.
Prepare grill for cooking over indirect heat, oiling the grates on the side opposite the lit burners so that chicken will not stick.
Place chicken on the side of the grill which is not turned on, but leave the other side of the grill on high. Close cover on grill and watch temperature; reduce heat to 325°F and continue to grill for about 15 minutes, then turn once and leave for another 15 minutes or so (this depends on the size of the chicken pieces).

When chicken is pierced with a fork and juices run clear, it is done.
If chicken appears dry during cooking, spray or baste as needed with olive oil spray or olive oil, but do not leave the grill cover up for too long or the heat will be lost.

Grilled Chicken with Rosemary



Try this amazing chicken grill recipe...Chicken is grilled, with lemon, garlic, rosemary, and butter...nice one !

INGREDIENTS

* 2 broiler chickens, split, about 5 to 6 pounds total
* 1/4 cup vegetable oil
* 1/2 cup melted butter
* 1/3 cup lemon juice
* 2 teaspoons dried rosemary, crushed
* 1 small clove garlic
* 1 teaspoon salt
* freshly ground black pepper, to taste

Instruction:
Prepare the grill; place an oiled rack 4 to 6 inches above medium coals.Combine the oil, butter, lemon juice, rosemary, garlic, and salt. Brush the chicken inside and out with 1/4 cup of the
seasoned butter.
Place the chickens on the grill, bone side down. Baste chicken halves frequently with the remaining butter mixture and turn 10 minutes. Grill for 30 to 40 minutes in all, or until chicken is tender and juices run clear with pierced with a fork. Sprinkle well with pepper and the chicken grill recipe is ready to serve.
