Double or triple ingredients as needed.
- 1 c. (4 oz.) button mushrooms, drained (or use fresh and pre-boil 1 to 2 minutes)
- 1 can pineapple chunks, drained
- Red and green pepper chunks
- 2 tbsp. oil
- 2 tbsp. soy sauce
- 2 tbsp. lemon juice
- 2 tbsp. fresh parsley, snipped
- 1/2 tsp. salt
- Pepper to taste
Place chicken and mushrooms in marinade overnight (6 to 12 hours).
Turn often, if possible. Alternate on skewers with remaining items. Grill 3 inches from heat 5 to 8 minutes, turning and basting with butter. The chicken grill recipe is ready to serve...nice !
