These chicken grill recipe of split broilers have a herb butter spread under the skin. Walnuts, basil and garlic baste into the meat while cooking over coals. Grill the entire meal if you wish: potato wedges, tomato halves and corn on the cob.
INGREDIENTS
- 1/2 c. fresh basil leaves
- 2 cloves garlic, minced or pressed
- 1/2 c. minced walnuts
- 2 tbsp. soft butter
- 2 tbsp. olive oil
- Dash hot pepper sauce Fresh cracked black pepper
- 2 tbsp. olive oil
- 1 tbsp. each lemon juice and white wine
Tips: If diners are not big eaters, 1 chicken would be enough for 4 people. If fresh basil is not available, use 2 teaspoons dried basil leaves or 1/2 cup chopped fresh parsley. Grill potato wedges (brushed with a little herb butter), tomato halves with onion slices and corn (silk removed, soaked in husks in water for 30 minutes). Vegetables will take from 20-30 minutes to grill.
Preparation: Split chickens in half. Cut off excess fat in tail area. Loosen the skin away from the meat and remove any fat underneath. You can also cut away backbone, if desired.
Mix together basil, garlic, walnuts, butter, oil, hot pepper sauce and black pepper. Press all but 1 to 2 tablespoons of herb mixture under the skin, reaching as many areas as possible.
When charcoal is ready , place chicken bone side down. Grill 12-15 minutes.
Meanwhile, to remaining herb butter add the oil, lemon juice and white wine. Brush some of this on the underside once. Turn chicken. Grill 12-15 minutes longer. Brush underside a few times
during cooking. Do not allow meat to char. Season with salt and black pepper if desired.
